  • 2 large bananas
  • 2 free-range eggs
  • 1 tablespoon olive oil
  • fruit of your choice for serving
  • 100g low-fat flavoured yogurt of your choice
  • 50ml honey

Instructions

  1. Mash bananas and mix with eggs.
  2. Heat a pan with butter and olive oil.
  3. Spoon in batter, cook until bubbling, then flip for 1–2 minutes.
  4. Repeat with remaining batter.
  5. Serve warm with fruit and yogurt.

Healthy Banana Pancakes for Breakfast

Need a quick and satisfying breakfast? These banana pancakes come together in just 15 minutes and require only three main ingredients.

Ingredients
  

  • 2 large ripe bananas
  • 2 free-range eggs
  • 30g butter
  • 1 tbsp olive oil
  • fruit of your choice
  • 100g low-fat flavoured yogurt of your choice
  • 50ml honey

Equipment

  • 1 non-stick frying pan

Method
 

  1. In a mixing bowl, mash the bananas, add the eggs, and mix well. If the mixture is a little runny, do not worry.

  2. Place a heavy-based frying pan on medium heat.
  3. Add a little butter and olive oil. When well heated, spoon a little mixture in, one at a time.
  4. When bubbling on top, turn and cook for 1 to 2 minutes more.
  5. Repeat with a little butter and oil and continue with the leftover mixture.
  6. Set aside and keep warm.
  7. Serve with fruit and yogurt.
