Ingredients

- 200–250 g halloumi, cut into 20–24 cubes
- 10–12 rashers streaky bacon
- Freshly ground black pepper
- Chopped chives (optional)
- Sweet & sour sauce (recipe below)
- Bamboo skewers, soaked in water 10 mins
Instructions
- Stretch each bacon rasher with the back of a knife, cut in half crossways. Season with pepper and sprinkle with chives (if using).
- Wrap one piece of bacon tightly around each halloumi cube.
- Thread 2–3 wrapped cubes onto each skewer.
- Heat a heavy pan or grill to high. Cook skewers 6–8 minutes, turning frequently and brushing generously with sweet & sour sauce, until bacon is crisp and halloumi is golden and gooey.
- Serve immediately with extra warm sauce for dipping.
5-Minute Sweet & Sour Sauce
In a small pot combine:
- ½ cup rice vinegar
- ½ cup ketchup
- ½ cup brown sugar
- ¼ cup soy sauce
Heat until sugar dissolves. Mix 2 tbsp cornstarch with ¼ cup water; whisk in gradually until thickened. Add a pinch of garlic & ginger powder if desired. Cool slightly – it will thicken more as it stands.
