Sweet & Buttery Pineapple and Bread Bake

- 1 Oven Baking dish +/- 22 x 27 cm to inches / 8.66 x 10.63 inches
Ingredients
- ½ cup butter
- 1 cup granulated sugar use less sugar if you do not want it too sweet or supplement with sweetener to taste
- 4 large eggs room temperature
- 570g crushed pineapple undrained
- 5 slices white bread or 2 cups cubed white bread, crusts removed and cubed, (crusts removed is optional)
- 1 tsp vanilla extract optional
- pinch of salt
- cinnamon or nutmeg for topping optional
Instructions
Preheat oven to 350°F (175°C). Lightly grease the baking dish
- In a large bowl, mix together the crushed pineapple (with juice), sugar, melted butter, and eggs until well combined.
- Fold in the bread cubes, making sure they soak in the mixture. Let sit for 5 minutes.
- Stir in vanilla extract and a pinch of salt if using.
- Pour mixture into the prepared baking dish and spread evenly.
- Optional: sprinkle lightly with cinnamon or nutmeg for extra flavour.
- Bake for 45–50 minutes or until golden brown and set in the center.
- Let cool slightly before serving. Can be served warm or at room temperature.
