JULIENNE: What is and how to do a Julienne cut.

To julienne a vegetable means to cut it into small, thin pieces and it is also know as “french cut”.

If you are cooking vegetables, a julienne cut allows for a vegetable to cook rapidly and evenly, and integrate well into a mix of other ingredients.

Common items to be julienned are carrots for carrots julienne, celery for céléris remoulade, or potatoes for Julienne Fries or better know as “French Fries”.
