Prepare the batter:
- Preheat your oven to 180°C/356°F Grease an ovenproof baking dish with butter to prevent sticking.
- Beat the egg and sugar until light and fluffy (use a hand mixer for ease if preferred).
- Sift the flour, salt, and baking powder into the egg mixture and fold gently to maintain the airiness.
- Warm the milk with the butter in a saucepan. Add vanilla essence. Pour the warm mixture over the batter and mix carefully.
Assemble the Dessert:
- Pour the batter into the prepared baking dish and spread evenly.
- Drain the peaches, reserving their juice for the sauce. Arrange the peach slices in a beautiful pattern on top of the batter (e.g., circular or fanned arrangement).
- Mix the brown sugar with cinnamon (and nuts, if using), and sprinkle this evenly over the peaches for a caramelized topping.
- Bake for 30–40 minutes or until golden brown and set.
Make the Sauce
- Whisk the peach juice with maizena until smooth and lump-free.
- Heat the mixture over medium heat until it boils, stirring constantly. Simmer for 2–3 minutes until thickened.
- Remove from the heat and stir in the butter, lemon juice, grated rind, and optional orange zest for a fragrant, glossy finish
Serve and Garnish:
- Spread the warm sauce generously over the baked dessert.
- Serve warm or cold with your choice of whipped cream, ice cream, or custard.
- Garnish with fresh mint leaves and thinly sliced peaches for a polished presentation.
