Preheat oven to 200°C.
- Halve each chicken breast fillet. Place each breast between sheets of plastic wrap and pound with a meat mallet, rolling pin or edge of small saucer until required thickness.
- Sprinkle chicken breasts with Cajun spice, add the bacon slices, cheese and tomatoes. Season with salt and pepper.
- Roll up each seasoned chicken breast with bacon, cheese and tomatoes inside. Tuck in ends and fasten with toothpicks.
- Place the stuffed chicken rolls into a prepared dish. Add the tin of tomatoes. You can sprinkle more grated cheese on top if you like it extra cheesy. Sprinkle with feta. Season with black pepper and mixed herbs to your taste.
- Place uncovered in the oven for 40 minutes, or until chicken is cooked and tender.
