Dried Apricots

Natural Yogurt

Unblanched Almonds
Roughly chopped
Instructions
Place the apricots in a saucepan, cover with cold water, bring to the boil and simmer for 5 minutes.
Drain and add fresh water to cover the apricots. Bring to the boil again. Cover, reduce heat and simmer for 20 minutes or until soft.
Cool slightly, then liquidise wuith just enough of the juice to produce a thick pure. Cool until luke warm.
Stir in the yogurt and chill until ready to serve.
Before serving heat the almonds in an ungreased frying pan over low heat for 2-3 minutes, until almonds are just starting to go brown.
Stir in half of your almonds and use the other half to sprinkle over the top of the dish before adding the garnish of your choice.
